On the 21st of July, we celebrate a very special and iconic day in Spain: International Gazpacho Day! Have you already heard of this delicious, traditional Andalusian dish? It quite literally tastes like the antidote to the summer heat: refreshing, hydrating, and light! Made from fresh vegetables and delicious olive oil from the south of Spain, it’s the ideal summer dish. No wonder it’s so popular and celebrated worldwide.
What is gazpacho?
Have you heard of gazpacho before? If not, let me tell you what all the hype is about! It’s a delicious cold soup made from raw vegetables. The recipe differs slightly from region to region, but it normally contains tomatoes, cucumber, green pepper, bread, olive oil, and garlic. You can already imagine why it’s such a perfect summer dish. It’s light, it’s filling, and, most importantly, it’s delicious! Will you try making it at home?
Fun fact: Many people outside of Spain think gazpacho is always eaten with a spoon. However, in Andalusia, it’s just as common to drink it from a glass. The best way to make your own gazpacho is with fresh produce. By now, you might have heard that it’s not so difficult to find fresh produce in the south of Spain, especially in the countryside. But let me tell you, it tastes even better when you can pick the produce from your own garden!
